Candy Cane Cheesecake

Cheesecake is a tasty classic and this version has a bit of pepperminty Christmas zing!

Ingredients

Cookie Crust

  • 1⅓ cup chocolate cookie crumbs
  • 2 tbsp sugar
  • cup butter

Cheesecake

  • cup sour cream
  • ½ cup sugar
  • 3 eggs
  • 1 tbsp flour
  • 2 tsp vanilla extract
  • ¼ tsp peppermint extract
  • 3 8oz blocks cream cheese
  • 2 tbsp butter
  • cup crushed peppermint candy

Instructions

  1. Preheat oven to 325° F

  2. Combine 3 cookie crust ingredients and press into a 9-inch springform pan

  3. Blend sour cream, sugar, eggs, flour and both extracts until smooth.

  4. Add cream cheese and 2 tbsp butter.

  5. Stir in crushed candy.

  6. Pour into crust and bake on lowest rack of oven for 50-60 minutes or until firm.

  7. Allow to cool (top may crack) and refrigerate overnight.

  8. Remove from pan and serve.Top with sweetened whip cream and garnish with candy canes if desired.
